Although there are records of the production of Hungarian horseradish since the seventeenth century, in Hajdúság, mass production did not begin to grow until the turn of the century. The fields were inherited by sons of fathers, hence their strong connection to horseradish production that overarches throughout generations. These days, hundreds of families are interested in the horseradish business in Hajdúság. These include small landowners, who grow horseradish on their 1 to 2 hectares of land to obtain additional income. The bigger portion includes producers with 5 to 10 hectares of land whose main income is the production of horseradish. In the Hajdúság horseradish region almost all households have something to do with horseradish, mainly as producers, some as farm workers. For these people, horseradish means all: it plays an essential role in their daily lives, and it is the guarantee of their survival.
